What is your favorite thing about Food Truck Friday?
The opportunity to meet so many cool people and see families in a relaxed environment. At lunchtime, so many guests are in a rush to get back to the office. FTF allows guests to hang out, grab food from several trucks and actually enjoy a beer while they lounge in a beautiful park.
Do you have any new menu items this year?
We are really focused on extending our thin crust pizza offerings. Previously, we’ve done mainly deep dish, but we have figured out a more efficient, consistent way to cook our thin crusts, so will be celebrating those this year.
What do you love about the STL food truck scene?
It’s such a cool way for people to experiment with a business concept in a relatively low cost, low risk way. Many trucks that I thought may not work have been wildly successful.

Death Cab for Cutie, Bowie and a lot of Chuck Berry recently
What’s the biggest challenge of running a food truck?
Keeping the old trucks running and keeping up with the rules in our fragmented region
What is your favorite menu item to make?
The Pi Stick is a favorite. It’s essentially a pizza burrito, made for walking around with a beer in one hand and a pizza in the other.
